Metaxasauce Original

Kyriakos' Secret Recipe for the Best Greek Metaxasauce

Ingredients:

For the Sauce:

  • 1 red pepper
  • 1 clove of garlic
  • 1 onion
  • 150 g mushrooms
  • 2 tablespoons tomato paste
  • 1 cup Metaxa brandy
  • 1 cup beef broth
  • 1 tablespoon cornstarch
  • 1/4 cup grated Parmesan cheese

For Serving:

  • Spaghetti or other pasta
  • Fresh parsley, for garnish

Instructions:

  1. Finely dice the red pepper, garlic, and onion. Slice the mushrooms.
  2. Heat a large skillet over medium heat. Add the olive oil and sauté the vegetables until softened.
  3. Stir in the tomato paste and cook for 1 minute.
  4. Add the Metaxa brandy and let it reduce by half.
  5. Pour in the beef broth and bring to a boil. Reduce heat and simmer for 15 minutes.
  6. In a small bowl, whisk together the cornstarch and a little water until smooth. Add to the sauce and stir until thickened.
  7. Stir in the Parmesan cheese and parsley. Serve over pasta garnished with fresh parsley.

Tips:

* For a richer flavor, use homemade beef broth. * If you don't have Metaxa brandy, you can substitute another brandy or cognac. * You can also add other vegetables to the sauce, such as carrots or zucchini. * Serve the sauce with your favorite pasta, such as spaghetti, penne, or linguine.
