Kyriakos' Secret Recipe for the Best Greek Metaxasauce
Ingredients:
For the Sauce:
- 1 red pepper
- 1 clove of garlic
- 1 onion
- 150 g mushrooms
- 2 tablespoons tomato paste
- 1 cup Metaxa brandy
- 1 cup beef broth
- 1 tablespoon cornstarch
- 1/4 cup grated Parmesan cheese
For Serving:
- Spaghetti or other pasta
- Fresh parsley, for garnish
Instructions:
- Finely dice the red pepper, garlic, and onion. Slice the mushrooms.
- Heat a large skillet over medium heat. Add the olive oil and sauté the vegetables until softened.
- Stir in the tomato paste and cook for 1 minute.
- Add the Metaxa brandy and let it reduce by half.
- Pour in the beef broth and bring to a boil. Reduce heat and simmer for 15 minutes.
- In a small bowl, whisk together the cornstarch and a little water until smooth. Add to the sauce and stir until thickened.
- Stir in the Parmesan cheese and parsley. Serve over pasta garnished with fresh parsley.
Tips:
* For a richer flavor, use homemade beef broth. * If you don't have Metaxa brandy, you can substitute another brandy or cognac. * You can also add other vegetables to the sauce, such as carrots or zucchini. * Serve the sauce with your favorite pasta, such as spaghetti, penne, or linguine.
